Do you ever grab a quick breakfast only to find yourself hungry within 30 minutes? Today, by popular request, I’m sharing one of my family’s favorite breakfast dishes – a grain-free Dutch baby. What is a Dutch baby? It’s basically an oven pancake that can be tweaked to suit your taste buds and nutritional needs.
My version has a hearty take to it from the fluffy version, though it can be made that way too. I remember back as a young teen getting bored with my packet of oatmeal or cereal and decided to search the cookbook for something new for breakfast. My first attempt came out wonderfully lofty, but had my dad asking, “What is that??” Haha… He asked only because while baking they tend to POOF up and look so cool.
While most Dutch baby versions are mainly egg with a bit of flour, I found that that wasn’t satisfying me, or my gang of 6, enough. For this version, I use a bit more flours to make it a dense belly-filling meal that will keep you from getting that empty feeling before lunch. You can see my other recipes here.
The absolute best part about this is that you can tweak to your heart’s content! You can use whole wheat, any kind of flour, berries, nuts…you get the idea. Here are some of our favorite combinations though we typically love the fresh fruit on top best:
- blueberry with cinnamon
- banana and walnut with spices
- cinnamon raisin
- chocolate chip
- dried cranberries with orange zest
Also, I can’t recommend enough sourcing local farm fresh ingredients like your eggs and milk. We have so many wonderful farmers around us and feel so blessed that allow us to have a herd share or crop share for what we don’t grow on our own. Fresh eggs have deep, dark yellow yolks that remind me of sunshine in the morning.

Ever wondered how to tell if you eggs are fresh? Here’s how:
Place the egg in a bowl of water. If it rests at the bottom it is quite fresh. If the egg stands upright on the bottom, it’s fine but needs to be eaten soon or hard-boiled. However, if the egg floats, it’s not any good. Also, when the eggs is cracked into a bowl, the yolk should sit up on the jelly whites. The whites should not be runny.
My flours I either get from a local bulk food store or online at Tropical Traditions (best source for coconut flour, sugars, oils, etc), or here for:
